This recipe is from Taste of Home- Kids Party Food.
We made this cake recently for Owen's 5th birthday. It is the most moist, yummy cake we've made. Each day in the fridge, it actually got more moist, and heavier too! We made a double recipe without the chocolate, split it in half, added the cocoa to one half, then poured both mixes into a double cake pan. This made it half chocolate, half vanilla and so yummy!
One-Bowl Chocolate/Vanilla Cake
(i have already doubled the recipe for you)
4 cups flour
4 cups sugar
4 tsp baking soda
2 tsp baking powder
1 tsp salt
2 cup vegetable oil
2 cup buttermilk
4 eggs
2 cup hot water
1/2 cup cocoa(add after splitting)
Combine all dry ingredients in one bowl (save the cocoa for later). Stir in oil, buttermilk, and eggs. Add water and stir until combined. Pour half of the mix into another bowl. Add the 1/2 cup cocoa to one mix. At the same time, pour both chocolate and vanilla mixes into a greased and floured double cake pan. Bake at 350 for 35-40 minutes or until toothpick comes out clean. Cool completely. Frost.
Icing-1 batch was enough for a double cake recipe
1/3 cup butter, softened
9 cups confectioners sugar
1/2 cup milk
3 tsp vanilla
Cream butter in a mixing bowl until fluffy. Gradually beat in 4 cups sugar. Slowly add milk and vanilla. Beat in remaining sugar. Add additional milk, if needed.
